We propose a 2 nights stay on BB in double room with bath or shower with the special overnight at the Fortezza de 'Cortesi, the original “Castrum Cortesianum" located in an absolute pristine environment where courtesy, history and silence are kings. The 2 Francigena tracks arriving and departing from Fortezza de’ Cortesi reach two other beautiful medieval centres: Gambassi Terme and Colle Val d’Elsa. The walk nourishes the spiritual and physical energy, in the silence of sacred sites, along the ridges of the Val d’Elsa, dotted with castles, abbeys, churches and farms originated by the passage of the Via Francigena. I will show you the organic row ingredients we mostly use for our recipes; according to the season… and the weather… we‘ll visit our organic garden and pick aromatic herbs and vegetables directly in our organic farm, then I’ll give you some basic information on our self produced saffron DOP and extra virgin olive oil, so that you will have no difficulties to choose the right ingredients from the shelves once back home.
